Why Precision Scaling Matters in Baking
In everyday stovetop cooking, you can easily double a stew or pasta sauce by eyeballing extra vegetables and seasoning to taste. In baking, however, chemical transformations rely on precise physical ratios. When you scale an artisan loaf from 4 servings up to 6 servings, your formula multiplier is:

Applying this exact multiplier to 500.0g of flour yields exactly 750.0g of flour. The same 1.50× factor applied to 350g water yields 525.0g, and to 10g salt yields 15.0g. By keeping this linear multiplier consistent across all ingredients, the dough's hydration remains locked at 70.0% and salt remains at 2.0%.
Oven Timing and Pan Considerations When Scaling
While ingredient quantities scale linearly with mathematics, baking time does not:
- Dividing into Individual Loaves: If you double a bread recipe (2.0×) and shape two separate 800g loaves rather than one giant 1600g loaf, your baking time remains virtually identical to the single-loaf recipe.
- Baking in a Single Larger Pan: If you pour a 1.5× cake batter into a larger, deeper pan, heat takes considerably longer to penetrate the center. You must reduce the oven temperature by 25°F (15°C) to prevent the exterior crust from scorching before the core sets.
